THE GRAPE GOURMET FALL WINE PAIRINGS CLASS Wednesday , October 5 6:00pm - 8:00pm Vicki McCain, Kitchenique Cooking School Director and Jake Purvis, Sommelier Transatlantic Wines $40 PLEASE NOTE OUR "WINE PAIRINGS" CLASSES ARE A BIT DIFFERENT FROM OUR DEMONSTRATION COOKING CLASSES IN THAT A LOT OF TIME IS SPENT ON THE WINES AND MOST OF THE DISHES ARE PREPARED THEREFORE THERE'S NOT A LOT OF ACTUAL COOKING DURING CLASS. Jake has found four delicious, affordable wines that all have special stories you'll enjoy hearing about. We'll sample Clos LaChance '09 Hummingbird series Sauvignon Blanc with a Cannelinni and Green Bean Salad with Kalamata Olives; One Hope California Chardonnay (which donates 50% of profits to the National Breast Cancer Foundation) with Sliced Apples with Warm Cheddar and Bacon Dip; Garner Carneros Pinot Noir with Roasted Butternut Soup and Educated Guess Cabernet Sauvignon with Cast Iron Seared Sirloin with Oysters (optional!) | HANDS ON BASIC KNIFE SKILLS Saturday, October 15 11:30am - 2:30pm Vicki McCain, Kitchenique Cooking School Director $40 If you were going to take only one cooking class in your whole life...this should be the one! In this-hands on class you will learn all about the most important tool in your kitchen, your knife. You'll learn how knives are made, how they should be handled, maintained and stored and most importantly how each style of knife should be used. You'll receive hands on instruction on paring, boning, slicing, chopping, dicing and mincing. We'll have various knives for you to use in class but it's important that you bring from home your 2 favorite knives; preferably a short blade and longer blade knife. You'll get a FREE custom Kitchenique Microthin cutting mat to use in class and we'll make a Red Gazpacho and sandwiches out of all your hard work to enjoy after class.

I hope you'll find this menu interesting and to your liking. We'll make a Cajun Spiced Seared Grouper on Grilled French Bread with Poached Egg and Smoky Paprika Lemon Hollandaise (a twist on Eggs Benedict!), a Spanish Potato Omelet (pictured) and Baby Greens with Warm Spiced Apples, Roasted Walnuts, Manchego, White Balsamic Vinaigrette.

Great soups are hard to beat for a quick "heat up" dinner or for unexpected guests! Healthy, hearty and delicious, homemade soups offer endless creative possibilities once you master a few basics. I've decided to combine my two basic soup classes and cover stock based soups and cream based soups in one three hour session. We'll start with a basic stock based Turkey Vegetable; Tortellini, Spinach and Tomato Soup and classic French Onion. Then we'll make a "chicken base" for cream soups (which can be frozen) and using that base make a Roasted Garlic and Cauliflower and Roasted Butternut Squash Soup. Be sure to bring your appetite and imagination!
