Come learn, taste and discuss these exotic spices as we prepare a menu of Shrimp Pate on toasted French baguette; Aromatic Spice "Blackened" Salmon, White Sweet potato Hash and Stir fried Zucchini and Mango Blueberry Cobbler with Cardamom for dessert.

We’ll start with a Black Sesame Crusted Seared Ahi Tuna over Spinach with shaved Red Onion, Cannellini Beans and a Ginger Lime Vinaigrette; Cumin Crusted Seared Chicken Breast over Romaine with charred Corn, Grape Tomatoes and Black Beans and Cilantro Cream dressing and Shrimp, Artichoke Heart Pasta Salad with Feta and Kalamata Olives and Poached Garlic Vinaigrette. Last month we offered this class (with a different menu of course) and though the turn out was small those who attended really enjoyed the concept and the recipes! This class menu offers some simply prepared dishes perfect for summer dinner parties. Most of the work can be planned and completed days before serving with little "last minute" cooking time . . and the recipes are delicious! We'll make a salad of Marinated Goat Cheese, Georgia Peach on Boston Bibb with Champagne Vinaigrette; Lemon Chicken with Scallions and Shallots over Pasta with Grill Pan Asparagus and Dark Chocolate and Bing Cherry in Filo Cups.

PLEASE NOTE OUR "WINE PAIRINGS" CLASSES ARE A BIT DIFFERENT FROM OUR DEMONSTRATION COOKING CLASSES IN THAT A LOT OF TIME IS SPENT ON THE WINES AND MOST OF THE DISHES ARE PREPARED THEREFORE THERE'S NOT A LOT OF ACTUAL COOKING DURING CLASS.
This month we'll discuss the differences in terroir and winemaking techniques of Franciscan Estate of Napa and Simi Winery of Sonoma. We'll also challenge your pairing sensibilities by sampling the '06 Simi Russian Rive Valley Chardonnay and '08 Franciscan Estate Chardonnay with Asian Seasoned Beef with Coconut Sticky Rice and Stir Fried Veggies; and the Franciscan Estate '06 Cabernet Sauvignon and Simi '06 Landslide Cabernet with Pan Roasted Chicken with Swiss Chard, Pancetta and onion with Creamy Polenta. Over the past several years I've created recipes for quite a few wine pairings classes featuring delicious and affordable Spanish wines. In the process I've learned about the unique ingredients and flavors used in Spanish cuisine In the class I'd like to share some simple to prepare dishes you'll enjoy this spring and summer! We'll start with a Red Gazpacho topped with avocado and cucumber finished with Spanish Sherry Vinegar. Cumin Crusted Gulf Shrimp over Black Bean Mango Salsa; Spanish Pork Tenderloin in Pimenton (Spanish Smoked Paprika) Sauce and Espresso Flan for dessert.
